Summer semifreddo

How could we ever compite with the all 'gelaterias' you find in Italy- one place selling better ice cream than the other! But, now and then I like to make my own combination of fresh berries, nuts, dried fruit or chocolate. Semifreddo comes from the italian 'half cold' and is a semi-frozen dessert that is similar to ice cream but a hole lot easier to prepare and doesn't require the same process of freezing as an normal ice cream would do.
As summer is coming closer, I have chosen a mix with some homemade strawberrie jam & fresh strawberries. You can also skip the jam and just do it with the fresh berries. This portion is made for ca 12 persons;
- 1 vanilla pod
- 3 dl of normal white sugar
- 4 big eggs (egg whites & yolks separated)
- 5 dl cream
- pinch of salt
Scrape the vanilla pod of its seeds. Mix on high speed the vanilla seeds, sugar & the egg yolks until the colour turns to be bright. In an other bowl whip the cream unti its soft - be careful not to mix for too long a time! In a third bowl mix the egg whites with a little pinch of salt until you can actually turn the bol upside down and nothing falls out.
Now, finally, you blend togehter the eggwhite mix & the whipped cream with the the eggyolk/sugar mix and add (in this case) the fresh strawberries & the jam. Blen everyhing togeheter carefully and put it in a bowl (glass, ceramics or plastic). Cover it with plastic folio and place it inside the freezer (minimun 4 hours).
Enjoy the semifreddo with more fresh berries, pistachios or drizzle some honey over!
