Recycling your christmas sweets!

Help!!! I have just passed Christmas eating and drinking amazing things. Now January is around the corner and it's time for me to start being healthy...well, good luck with the healthy side as I still have a few beautifully wrapped pandoros and panettones left untouched in one corner of my kitchen. I really can’t go on eating them every day for breakfast either...even if I have to admit that a slice dipped in my morning cappuccino is so good. So what else can I do with the them?
Here are a few ideas how I turn the leftover cakes into something delicious!

Toast - It's so simple! Panettone makes wonderful slices of toast that are just the best addition to any breakfast. Cut the slices thick and toast in butter until golden, one to two minutes per side. Spread the toasted slices generously with your favourite jam or Nutella if you really want to do it the Italian way. My personal favourite is a spread made with ricotta cheese & honey with a spoon of grated orange zest.
Panettone French Toast – Everybody loves French toast! French toast is a good way to use up any extra pandoro or panettone. The rich bread makes an excellent base for the eggy batter. Try adding a tea spoon of cinnamon to the batter to spice it up a bit. Serve with honey & fresh berries.
Tiramisu - the queen of panettone recipes! When making tiramisu simply substitute the layers of savoiardi cookies with slices of bread. It comes out as delicious as the original!
With these sweet ideas I am sure you will not waste even a slice of panettone in the future!
